Apple Canyon Gourmet Owner, Anna Shawver
Anna was raised in New Mexico, and spent much of her time growing up around her maternal grandmother who expressed love for her family by cooking. Shawver's grandmother's dishes were prepared using heirloom recipes, which led directly to Shawver's love of native New Mexican foods and also to the her starting Apple Canyon Gourmet.
Apple Canyon products have found a place at the tables of many fine resorts, restaurants, and grocers throughout the US and even in Germany. One of Apple Canyon's products, Santa Fe Seasons Red Chile Jelly, is one of Anna's favorites. Find out how Anna incorporates this favorite into a dish below.

Red Chile Jelly - Glazed Chicken Breasts with Goat Cheese
4 Boneless chicken breast halves, with skin
4 oz. Goat cheese, mixed with 4 tsp fresh rosemary
¼ cup melted butter
4 oz. Santa Fe Seasons Red Chile Jelly, melted
Preheat oven to 375 degrees. Gently loosen skin to open a pocket large enough for 1 oz. of goat cheese mixture. Be careful not to tear skin or surrounding membrane. Using a spoon, stuff the cheese under the skin of each breast.
Place breasts in a baking dish skin side up. Pour melted butter over chicken. Bake for 15 minutes. Remove from the oven and pour melted Red Chile Jelly over the breasts and bake an additional 15 minutes or until springy to the touch. Serves 4.
