Quick Pickling is AMAZING. It’s all the benefits of pickling without the fuss. You don’t have to have worry about the canning steps and you can enjoy the canning goods for up to a month in the fridge. All you need is a simple brine and a few days to finish the job.
My husband, the chef, had some watermelon radishes leftover from the weekend and they were going soft quickly. He decided to do a quick pickle on them to use later in the week.
Quick Pickled Watermelon Radishes:
Makes 2 small jars:
1c apple cider vin
1c white distilled vin
1/2 c water
1/2 c sugar
2 Tbl pickling mix
1 Tbl salt
1 Tbl mustard seed
Bring all pickling ingredients to a boil. While they are coming up to a boil- clean, peel, and quarter 6 watermelon radishes. Fit prepared radishes into small canning jars. When ingredients have come to a boil, pour over the radishes and seal. Let the cans sit for 5 days before opening. Enjoy!
